Monthly Edition: Paleo Recipe Roundup

One of my goals for this year is to cook more and try new recipes. To make myself actually do this, I’ve tried using a different cook book each week as I plan out my meals. It has been loads of fun and I’ve discovered some really great recipes that I must share.

These are the three cookbooks I’ve used so far this year. I highly recommend them all:

Well Fed 2 by Melissa Joulwan (many of her recipes are found on her website)

Beyond Bacon by Matthew McCarry (some of his recipes can be found his Paleo Parents website)

The Paleo Kitchen by Julie Bauer and George Bryant (recipes can be found on Julie’s PaleOMG site and George’s Civilized Caveman site)



Lavender Vanilla Bean Granola, recipe from The Paleo Kitchen: This recipe is sadly not available anywhere online.  Let me just say though, this recipe alone is worth the money I spent on the eBook version of this cookbook. It is delicious! I’ve already made many batches for myself and as gifts.

Biscuits and Gravy, recipe from The Paleo Kitchen (pictured above): This recipe can be found online here. This is a bit of a time consuming recipe, but it is well worth. My husband loves biscuits and gravy but we haven’t made it very often because of my gluten sensitivity. The sweet potato biscuits in this recipes are just right and the sausage gravy is AMAZING.


Sweet and Salty Broccoli Salad, recipe from Well Fed 2: This recipe can be found online here.  I highly recommend doubling this. I also substituted dried cranberries for the raisins because I like them better and that’s what I had on hand. I like to make up a double batch of this on the weekend and then eat on it for lunch throughout the week. It would also be a great dinner side.

Oven Fried Salmon Cakes, recipe from Well Fed 2: This recipe can be found online here. My mom used to fix salmon cakes when I was younger and for some reason I couldn’t stand the smell (sorry, Mom). I’m pretty sure my taste buds have drastically changed and it also probably has something to do with this AMAZING recipe. I like to double this one and have them to eat for lunch throughout the week. These are also great for dinner. One batch is enough for two, but double it if you have more people or want leftovers. I buy wild caught boneless salmon in a can from Costco.


The Bacon Chicken, recipe from Beyond Bacon: This recipe can be found online here. OMG… this chicken is SO VERY GOOD. Have I gotten your attention yet? I have never made a chicken that came out so very moist and delicious. My daughter devoured it and my husband said it was the best he’d every had. This is also a one-pot dinner (which I’m a huge fan of these days) because it has cabbage that cooks in the bottom of the dish. Don’t like cabbage? I bet you will change your mind when you try this. I used this cast iron casserole dish from IKEA to make this.

Insanely Awesome Meatloaf, recipe from Beyond Bacon: This recipe is sadly not available anywhere online, but let me just say that its name is most definitely fitting. This meatloaf recipe uses ground pork and is insanely good. I HIGHLY recommend buying Beyond Bacon. You will not be disappointed.

Chicken Nanking, recipe from Well Fed 2 (pictured above): This recipe can be found online here. This recipe is amazingly delicious and includes both meat and veggies. You can make rice (regular or cauliflower) to go under this and your dinner is done. My husband raved about this one. It is definitely going into our regular meal rotation.
