This month I haven’t branched out as much because I have become obsessed with Mel Joulwan’s recipes all over again. Here are some of my favorites from her website and cookbooks.
Recipes I’ve tried and loved:
Paleo Creole Ham and Cauliflower Rice : This is a great recipe to use when you are tired of beef and chicken. I had the deli at Whole Foods cut a pound of ham in really thick slices and then diced them for this recipe. Cauliflower rice seems difficult, but it really isn’t if you have a high powered blender or food processor.
Paleo Pad Thai: This recipe is so very good. I love pad thai and don’t get it that often from restaurants because however it is cooked usually ends up messing with my stomach afterwards. This is a go-to meal for me and one of my favorite paleo dishes.
Moroccan Meatballs: These are probably, hands-down, my favorite meatballs. I have only made them with ground lamb, but I bet they would also be good with ground pork or a mixture of ground pork and beef.
Stovetop Pork Carnitas: This recipe is a little more time consuming, but the end product is definitely worth it. These are a little spicy, so cut back on the cayenne pepper if you don’t like a lot of spice.
Chocolate Chili: This chili is delicious and the cocoa powder adds just the right amount of flavor. I like to eat this chili topped with avocado chunks.
Herb Parsnip Fries: I made these for my family a few weeks ago. My 16 month old devoured them and my husband didn’t even realize they weren’t regular potato fries. These are also good if you do a mix of parsnips, carrots, and sweet potatoes.
Mustard Garlic Brussels Sprouts: I typically make my brussels sprouts with bacon and lard, but I wanted to try something a little different. I found these on Mel’s website and absolutely love them.
Coconut-Almond Green Beans: These green beans are another go-to in our house. I’ve found that they taste the best if I use frozen green beans.
